Coconut Milk Crepes

These light and dairy-free crepes are sure to make everyone in your family happy!

  1. 1 1/2 Cups of Coconut Milk
  2. 1 Cup of Flour
  3. 1 Egg
  4. 2 tablespoons of coconut oil
  5. 1 teaspoon of Vanilla
  1. In a mixing bowl, add the egg, Coconut Milk, Vanilla, and Coconut oil, then mix together.
  2. Then gradually add in the flour. Mix well.
  3. Place an element on medium heat and place a frying pan to warm up with a dab of coconut oil to prevent the crepes from sticking.
  4. Pour a large spoon into the centre of the pan of the mixture, and then move the pan in a circular motion to spread the mixture out.
  5. Cook each side until golden brown.
  6. Enjoy!

    Very yummy! We’re trying a dairy free week and really wanted crepes, so this recipe was great. Maybe it was the milk I used, but I had to add another 1/2 cup of water to get the batter to the right consistency. The crepes seemed much more fragile than traditional crepes, but the light coconut flavor was super yummy and worth the learning curve. Thanks!

      Hi Kaya! Yes, they definitely are more fragile. Thanks so much for your feedback. How did your dairy free week go? I also love making almond milk instead of cow milk. If you buy a jar of almond butter… A 2 tbsps in a later of water blended works really well. :) Have a great weekend!
