Very yummy! We’re trying a dairy free week and really wanted crepes, so this recipe was great. Maybe it was the milk I used, but I had to add another 1/2 cup of water to get the batter to the right consistency. The crepes seemed much more fragile than traditional crepes, but the light coconut flavor was super yummy and worth the learning curve. Thanks!

Hi Kaya! Yes, they definitely are more fragile. Thanks so much for your feedback. How did your dairy free week go? I also love making almond milk instead of cow milk. If you buy a jar of almond butter… A 2 tbsps in a later of water blended works really well. :) Have a great weekend!

I have made these several times. They are delicious! Thanks for the recipe. The only changes I made were to add salt and exchange a quarter to a half cup of the coconut milk for water. The crepes did not seem more fragile than traditional crepes to me, although they did not brown for me like crepes made with cow’s milk.
