Gluten Free Cornmeal Muffins!
These are great! Moist, yummy, and easy to make.

Ingredients
  1. 1 cup cornmeal
  2. 1 cup Rice Flour
  3. 1/3 cup coconut sugar
  4. 2 teaspoons baking powder
  5. 1 egg, beaten
  6. 1 teaspoon Vanilla
  7. 1/4 cup Coconut Oil
  8. 1 cup organic 3% milk
Instructions
  1. Mix all dry ingredients together.
  2. Beat egg and vanilla together.
  3. Add Coconut oil, milk and egg vanilla mixture into dry mix.
  4. Beat on low for 1 minute
  5. beat on medium until smooth consistency.
  6. Bake for 14-16 minutes at 375. Take out and let cool. I love using my silicone muffin tray ( purchased mine from Canadian Tire) Spray lightly muffins pan.
Notes
  1. Enjoy! I put jam or honey with my muffins when they are warm. A delicious snack!
