  1. Pasta
  2. 5 medium zucchini (thinly sliced using a mandolin or by hand)
  3. 1tbsp (5ml) Olive Oil
  4. 1/2 tbsp (3ml) salt
  5. Place in bowl and allow to sit for 20 minutes
  6. Sauce
  7. 1 cup (250 ml) sundried tomatoes
  8. 1 Roma Tomato
  9. 1 clove garlic
  10. 1tbsp (15ml) chopped onions
  11. 4 or 5 leaves fresh basil
  12. 2 tbsp (30ml) olive oil
  13. 1/2 tbsp (3ml) sea salt
  14. Cheese
  15. 1 cup (250 ml) cashews soaked overnight
  16. 1/2 (125 ml) cup water
  17. 1/4 tsp (1 ml) sea salt
  18. 1 tbsp (15 ml) olive oil
  1. Lay the thinly sliced zucchini so each slightly overlaps the other, making a square shape, and top with sauce and cheese. Add a second layer of zucchini noodles and continue to add the cheese and sauce; repeat until you have four layers. Garnish with fresh basil
