Tomato Pasta with Black Bean Noodles

Vegan Tomato Pasta with Yellow Peppers

This Vegan pasta is very tasty and light. It won't upset the stomach.

  1. 1/2 Yellow Pepper "sliced into thin strips"
  2. 12 Small whole cherry tomatoes
  3. Fresh Basil
  4. Marinara Tomato Sauce (Can buy or make from scratch)
  5. 2 Tbsp. Minced Garlic
  6. 1 Tbsp. Olive Oil
  7. 1 1/2 cups Black bean Noodles
  1. In a frying pan, place the oil and garlic in the pan, cook until browned.
  2. Add the sliced yellow pepper and cook for a few minutes.
  3. Add the Cherry Tomatoes
  4. Add the marinara sauce.
  5. Cook on Low.
  6. Bring to a boil a in a large pot the black bean noodles, cook until soft. Drain and combine the pasta and noodles.
  7. Top with fresh basil.
  8. Enjoy!
  1. You can add other vegetables if you like too.
